Acerola puree can range in color from yellow to orange to pinkish due to several factors:
- Ripeness: Acerola fruit naturally changes color as it ripens. Unripe acerola tends to be green, while ripe fruit ranges from yellow-orange to a deep red. Puree made from riper fruit will have a more vibrant orange or pinkish hue.
- Variety: Different acerola varieties have varying pigment compositions.
- Oxidation: Exposure to air can alter the color.
- Processing: Gentle processing preserves natural pigments, while intensive methods may cause color changes.
Acerola is exceptionally healthy due to its high vitamin C content, providing up to 30 times more than oranges. It is rich in antioxidants and also contains vitamins A, B1, B2, and B3.
