Raw, hpp or cooked, this puree is always finely grinded and keeps it’s intense red/purple colour. The stable colour profile, it’s rich source of folate and nitrate and unique earthy to sweet taste makes it useful in virtually any dish. From colouring tomato paste and sauces to use in desserts, jams or smoothies… It has a delicious but distinctive flavour.
